As summer left, the days are getting cooler and shorter. It is time for baking again, keeping the house warm with a delightful smell of baked goodies and dinner recipes.


My friend bought me this mini oven that works just like the real oven and is sitting in the cabinet for years, kind of a waste, you know. I re-discovered the oven while cleaning the cabinets one day and thought it might be a good way of cooking small dinner portions and warming food at daytime. The oven might be something students away from home consider to have, enjoy some baked goodies with some friends. My mind was flooding with so many good use this oven would be for...

If using two glass containers, small and medium size, one with a glass top for the potato is perfect for one dinner recipe. Pyrex has some containers with top cover also in glass with a tiny vent and it works really good.

Baked Salmon with Mushroom & Tomato

Salmon - 2 to 3 piece cut in portions
Mushroom - thin slices
Tomato - 4 to 5 baby tomatoes
Spice - Lemon pepper
Olive oil
Potatoes

Wash fish, tomatoes, and mushroom, immediately cut the mushroom and tomatoes in thin slices.

Prepare glass container, spray or add drops of olive oil on container, just enough to coat the bottom. Lay the fish portions on the container, sprinkle some lemon pepper spice, depending on how tasty you want it to be. Add the mushroom, tomatoes and add a few more drops of olive oil.


Turn on the oven to 400 degree and bake for 20-30 minutes. It smells so good!

The washed potatoes will be in a separate bowl, the one with a top since it will take longer time for potatoes to cook. Make sure the potatoes are poked several times with a fork to help with cooking. Arrange the potatoes in the glass container, add a few drops of olive oil and put the top cover before placing it inside the oven. It will take 30-40 minutes for the potatoes to cook depending on the size of potatoes.

If both your containers will fit in the mini oven, it would be perfect for one meal, complete and enjoy.
