Chicken Corn Chowder

Chicken corn chowder. It's one of my family's favorite cold weather soups. My husband used to buy it in the cans but the kids kept eating them while he was at work. When six kids decide they like something it is time to find a recipe. The recipe below has been adapted from several recipes I have tried and tweaked with my own personal touches. The end result is a good hearty soup the entire family begs for.
Chicken Corn Chowder
serves 6
2 tbsp margarine
1 large onion diced
2 celery stalks chopped
1 green pepper chopped
1 cup cooked chicken chopped
2 cups frozen corn kernels
6 medium red potatoes diced
1 medium carrot chopped small
6 cups of water with 4 tbsp chicken bullion (Oxo) added to it
1/4 tsp tobasco sauce
1/2 tsp pepper
1/2 cup flour
2 cans evaporated milk or** 3 cups milk and 1 cup powdered milk**
3tsp parsley
3 tbsp bacon bits
In a large heavy saucepan melt margarine. Add onion, clelery, green pepper, and chicken. Sautee for 2 or 3 minutes.
Add next 6 ingredients to saucepan and bring to a boil. Reduce heat and simmer for 15 minutes or until potatoes and carrots are tender.
Combine flour and evaporated milk or milk mixture in bowl. Whisk until smooth. Add to soup along with parsley and bacon bits. Bring to a boil and stir until thickened.
