Garden Abundance, fresh and tasty


The sun was early today as fall is coming closer and summer will soon be forgotten for a while. I dared today to make a special breakfast. A breakfast so unplanned, never had before and with only what is available in the garden. With this goal in mind, I look around to see what is available and pick the following:


1 Baby Eggplant - 6 inches in length,
Eggplant
Fresh from the garden

2 Baby Nopalea Grande - an edible cactus known to Latin world,
Napolea Grande Cactus
Baby ones 2-4 inch

Fresh Garlic Chive,
What is available in my garden
Garlic chive are long green stalks


Plenty of Cherry Tomatoes,
and green leafy Alugbati (Malabar Spinach or Mong Toi in Korean)

The cactus needs a special handling because of its' prickly hairs. With the help of a yellow rubber gloves I use for washing the dishes, thus protecting my hands from being pricked while holding the cactus to scrape the spikey hair on both side of the leaf or paddle. I did not weigh nor count any of the tomatoes, just wash them with running water. Then cut the eggplant and cactus in cubes. Leave the Alugbati as it is. The garlic chives needs to be chop as well.

Oh, I decided to cook 1 potato, cut in cubes just in case it is not enough. LOL...Started the cooking of what I would dare to eat in a few minutes. Poured a teaspoonful of Olive oil and added cut onions, garlic chive and egg, followed by eggplant, next is tomatoes to add moisture, cactus and alugbati as the last. Wait for 2 minutes, turn off the stove and cover it for 2 more minutes. One more thing, I added some salted cashews to make it a little tastier.

It was juicy and tasty enough, especially knowing it came from my garden. It is worth knowing what I am going to eat is fresh and full of nutrition. I ate it all up!! The salted cashews added a little contrast to the tomatoes' sweetness. The tomatoes were still in nice round shape but warm to the mouth. Yumm..

What can I ask for? This is such a wonderful day with a wonderful breakfast.

Garden vegetables are freshier and yummier for sure. The best!!!!
