Nuts turn rancid in time

My friend was searching her pantry so full of goodies, took a big box of mixed nuts and seed to serve us who were visiting that time, when her husband stopped her from doing so, telling her to throw it away instead without any further explanation. She was furious and embarrassed, having been apprehended in front of her friends, besides knowing that her husband brought the box just a week ago; proudly announced to her that a friend gave him that big box of mixed nuts and sunflower seeds for a healthy salad addition. So what could be the reason he wants to throw it away? The reason is rancid, toxic for one's health. That she found out the moment she opened the box of mixed nuts and sunflower seed.


That incident never left my mind and when I got home, turn on my computer and did some research on nuts storage. I was shocked!

Nuts are known to have high fat content that is mostly unsaturated fat and is good for you as it helps maintain a desirable level of good HDL cholesterol. However, nuts that has been stored for a long time exposed to air, heat, light and other elements will enhance oxidation, causing the nuts to deteriorate in taste and smell. It becomes rancid spreading a strong odor and a bitter after taste or can even be sour. The color turns darker and if you will notice, hint of oil is found around the nuts when you touch it.

The nuts stored in my pantry turned out to be rancid. The dates were from 3-4 years ago and the smell is very strong, an oily smell that exploded when you popped your nose into the packaging. I tasted each one as an experiment to find out how they taste and it is easy to tell the difference from a fresh nut to a rancid nut. They taste alright, bland but not bitter no sour but the sweetness is gone. It's time to throw them away before I am tempted to eat them for not wanting to waste my hard-earned dollars. The worst would be rancid nuts going in my body, polluting me.


Now, it is becoming clear why there is a strong smell present on those stored nuts whenever a handful is needed for cooking and it is bad if they are not stored properly, consumed in the right time. The best way to enjoy the health benefits of nuts is to store them in a cool dry place and eat them everyday in the given best by date.

Different nuts turn rancid depending on the amount of polysaturated fatty acid content and some turn rancid fast while some are slow to turn rancid. From the fastest english walnuts, pecans, brazil nuts, peanuts, almonds and pistachios, to the slowest cashews and hazelnuts.

The nuts that is harvested from the backyard would be the freshest nuts there is. But what of those people who have no backyard to plant all the nuts for the benefit of the good unsaturated fat contained in nuts? Buying from a store with a high turnover would be a good idea, meaning you get to enjoy the fresher nuts delivered in the store and enjoy them before the best by date or shall we say expiration date.
