Spinach with Napolea Cactus Salad Recipe

As soon as the cactus forms into new ones, there is no waste of them. The baby cactus will be harvested, cleaned, armed with the yellow latex gloves and a knife scraping all the fine hair-like spine on both sides. Most of the time the top tip is thickly covered with spine that it is best to just cut them, make it easier and faster to taste those yummy cactus that slides to your throat like jellies, crunchy but not hard to eat. It is best to cut them in tiny pieces like a half inch wide in squares. The younger they are, the more tender the cactus will be, crunchy and bright green in color.


As you cut the cactus in bits, the slime starts to cover the little pieces of cactus and it will be slippery to handle. Some people boil the cactus first before preparing it for salad for a less slimy feeling. However, if you are not that particular with the slime, which is also considered a good part of the cactus, you can prepare the cactus fresh without boiling.

Came up with this spinach salad with cactus, simple and tasty. This is one of my favorite salad with the right taste highlighted by the olives and avocado. Easy to prepare and no need to buy salad dressing, sitting in store shelves waiting for you to buy them. You need the following:

Spinach SALAD with Cactus

Spinach - a handful or according to your hunger's desire
Mushroom - cut in thin slices
Cabbage - grated, more or less a fistful
Onion - thinly sliced
Olives - cut in half or smaller, black ones
Avocado - half the fresh fruit, crushed
Tomato - red mini ones, 2-3 tomatoes, sliced
Four Bean Salad - available in stores
Napolean Grande Cactus - cut in half inch cubes
Olive Oil - 1or 2 teaspoon
Cashews / almonds - salted or unsalted depending on your tastebuds

You can add or omit whatever is in the mix depending on how you make your salad. I usually just make whatever is available for my salad, knowing what I will be eating because I personally prepared the salad and that is what matters most to me.

Mix all the ingredients above in a bowl and enjoy as you can see the picture below...
