Onions, red and green peppers



Homemade Vegetarian Pizza Recipe
Marinated Artichoke


Ingredients:

Dough
11/4 cups all-purpose flour (divided 3/4 , 1/2)
1 package yeast or 1 Tablespoon yeast
1/2 teaspoon sugar
1/4 teaspoon salt
1/2 cup hot water (120 degrees)

Directions
1. Warm the water on stove top.
2. In a medium mixing bowl , combine 3/4 cup flour, yeast, sugar and salt; add hot water, stirring until smooth. Mix in the remaining 1/2 cup flour to make a soft dough.

3. Knead dough on floured surface until smooth and elastic, for 3 to 5 minutes. Cover dough with the bowl and let rise; an hour or two. Make sure to place the dough in a warm place like the oven that is turned off. Spread dough on pizza stone dusted with cornmeal while you prepare the toppings.

Pizza toppings:
Cornmeal, for dusting
Basic Pizza dough, recipe above
1/2 can 6 oz tomato paste (dilute with 1 teaspoon water)
1/2 red bell peppers, stemmed, seeded, and cut into medium chunks
1/2 green bell pepper, stemmed, seeded, and cut into medium chunks
1 medium yellow onions, slice into rings, 1/8 of an inch
8 pieces Portobello mushroom, slice sideways, thinly
2 medium size broccoli, slice thinly
10 Olives, slice in half or three
1/2 cup grated cheese or more
2 spoonful marinated artichoke , drained
1-2 teaspoon Fresh oregano or dried
1 teaspoon fresh thyme
1/2 teaspoon garlic
1/2 teaspoon black pepper


Preheat the oven to 375 degrees F.
Remember to sprinkle some cornmeal on the pizza stone before rolling out the dough on it.
On the surface of the pizza crust, spread the tomato paste with a butter knife evenly. Leave 1/2 inch free of sauce around the edge.
Lay a third of the onion rings, mushrooms on the tomato paste.
Spread some cheese on top, just a little bit to keep them together.
Sprinkle the oregano, thyme, garlic and peppers.
Mix the remaining onions, mushroom with the peppers, artichoke too and spread on top.
Add the broccoli and olive, then sprinkle the remaining cheese over the veggies.
Bake for approximately 20 minutes, or until golden brown and bubbly. Serve hot.

The pizza is a little bland but tastes perfect. Play with the toppings according to what is available or to better the taste.
